Ingredients
<p>2 cups fresh or frozen blueberries</p>
<p>1/2 cup sugar</p>
<p>1 tbsp cornstarch</p>
<p>1 tbsp lemon juice</p>
<p>1 tsp lemon zest</p>
<p>1 pre-made pie crust (top and bottom)</p>
<p>1 egg for brushing</p>
Instructions
<p>1. Preheat your oven to 375°F (190°C).</p>
<p>2. In a bowl, mix blueberries, sugar, cornstarch, lemon juice, and zest.</p>
<p>3. Roll out one pie crust into a 9-inch pie pan.</p>
<p>4. Pour the berry mixture into the crust.</p>
<p>5. Top with the second crust or create a lattice pattern.</p>
<p>6. Brush top crust with beaten egg.</p>
<p>7. Bake for 40–45 minutes or until golden and bubbling.</p>
<p>8. Cool before slicing and serving.</p>
