Sausage Gravy

  • 1 lb breakfast sausage (crumbled)
  • 3 tbsp all-purpose flour
  • 2.5 cups whole milk (plus more if needed)
  • salt and freshly ground black pepper (to taste)
  • 0.5 tsp garlic powder (optional)
  • 0.5 tsp crushed red pepper flakes (optional)

Pizza

  • 1 pre-made pizza dough (or homemade if preferred)
  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded cheddar cheese
  • 4 large eggs (optional, for topping)
  • 1 tbsp butter (for greasing)
  • fresh chives or green onions (chopped, for garnish)

Instructions

  1. In a large skillet over medium heat, cook the sausage until browned and cooked through, breaking it up as it cooks.
  2. Sprinkle the flour over the sausage and stir for 1–2 minutes until absorbed and slightly browned.
  3. Gradually whisk in the milk, stirring constantly until the gravy thickens, about 5–7 minutes.
  4. Season with salt, pepper, garlic powder, and red pepper flakes to taste. Remove from heat and set aside.
  5. Preheat oven to 425°F (220°C). Roll out dough and place on a greased or parchment-lined baking sheet or stone.
  6. Pre-bake the crust for 6–7 minutes until it begins to puff and firm.
  7. Spread sausage gravy over the crust, leaving a small border. Add cheeses and crack eggs on top if using.
  8. Bake for 10–12 minutes, until cheese is bubbly and eggs are set with runny yolks (if used).
  9. Let cool for 2–3 minutes, garnish with chives or green onions, slice, and serve.
