Description

A chewy, cinnamon-spiced cookie loaded with fresh apple pieces and topped with a glossy red glaze. It’s like biting into a carnival candy apple, but in soft cookie form!


Ingredients

1/2 cup unsalted butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 cup finely diced apples (Honeycrisp or Granny Smith)
1 tbsp brown sugar (for apples)
1 tsp cinnamon (for apples)


Instructions

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Cream butter and sugars until fluffy. Add egg and vanilla and mix until smooth.
3. Mix in flour, baking soda, cinnamon, and salt.
4. In a small skillet, sauté apples with brown sugar and cinnamon for 5 minutes. Cool.
5. Fold apples into dough. Scoop dough onto prepared baking sheet.
6. Bake 10–12 minutes until edges are set and golden.
7. Let cookies cool completely on wire rack.
8. Mix powdered sugar with apple juice and red food coloring.
9. Drizzle glaze over cookies and let set before serving.

Notes

Let cookies cool fully before glazing to avoid melting the sugar.
Store in an airtight container for 3 days.
Optional: Add crushed pecans or red sanding sugar on top of glaze.
