  • 2 cups Chicken breast (Cooked and shredded)
  • 1.5 cups Corn kernels (Fresh or frozen)
  • 4 cups Chicken broth (Preferably homemade)
  • 1 Onion (Finely chopped)
  • 2 cloves Garlic (Minced)
  • 1 tsp Ginger (Grated)
  • 1 tbsp Cornstarch (Mixed with 2 tbsp water for thickening)
  • to taste Salt and pepper

Optional Garnishes

  • Green onions (Chopped for garnish)
  • Sesame oil (Drizzle on top)

Instructions

  1. Heat oil in a large pot. Add onions, garlic, and ginger, and sauté until fragrant.
  2. Add shredded chicken and corn kernels. Stir for 2 minutes.
  3. Pour in the chicken broth and bring to a boil. Simmer for 20 minutes.
  4. Add the cornstarch slurry and stir continuously until the soup thickens.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions and a drizzle of sesame oil.
