Ingredients
2 boneless chicken breasts, cubed
1 tbsp Cajun seasoning
1 green bell pepper, chopped
1 small onion, diced
1 celery stalk, chopped
2 cloves garlic, minced
1 cup long-grain rice
2 cups chicken broth
1 tbsp olive oil
Salt to taste
Instructions
1. Heat oil in a large skillet over medium heat.
2. Add onion, bell pepper, and celery. Sauté for 5 minutes.
3. Stir in garlic and cubed chicken. Cook until browned.
4. Sprinkle in Cajun seasoning and mix well.
5. Add rice and stir to coat with flavor.
6. Pour in chicken broth and bring to a boil.
7. Cover and reduce heat to low. Simmer for 20 minutes.
8. Remove lid, fluff with a fork, and serve hot.
Notes
Use leftover cooked rice to speed things up.
