Ingredients
1 cup cooked quinoa
1 ½ cups cooked chicken breast, diced or shredded
½ cup cherry tomatoes, halved
½ cucumber, diced
¼ cup red onion, finely chopped
¼ cup crumbled feta (optional)
2 tbsp olive oil
1 tbsp lemon juice
1 tsp garlic powder
Salt and pepper to taste
Instructions
1. Cook quinoa according to package instructions and let it cool.
2. In a large bowl, combine chicken, quinoa, tomatoes, cucumber, and onion.
3. In a small bowl, whisk olive oil, lemon juice, garlic powder, salt, and pepper.
4. Pour the dressing over the salad and toss well to coat.
