Fresh seafood salad with shrimp, scallops, and mixed greens

This fresh and vibrant seafood salad combines cooked shrimp, crab meat, and scallops with crisp greens, tomatoes, cucumbers, and a tangy lemon vinaigrette. Perfect for a light, healthy meal.

  • 1 cup cooked shrimp
  • 1 cup crab meat
  • 1 cup scallops (seared)

Vegetables

  • 2 cups romaine lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (sliced)
  • 1/4 cup red onion (thinly sliced)

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard
  • 1 tsp fresh dill (chopped)
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper (to taste)

Instructions

  1. Prepare the seafood by cooking shrimp and searing scallops. Let them cool before chopping.
  2. Chop the lettuce, halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, fresh dill, salt, and black pepper.
  4. In a large mixing bowl, combine the seafood, vegetables, and dressing. Toss gently to coat everything evenly.
  5. Refrigerate the salad for 15 minutes before serving to enhance the flavors.

Notes

For an extra flavor boost, add avocado, feta cheese, or grilled corn. Pair with a crisp white wine or sparkling water.
