Ingredients
  

Classic Battered Version
  • 1 head cauliflower cut into florets
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3/4 cup water
  • 1 tbsp olive oil
  • 1/2 cup buffalo sauce
  • 1 tbsp butter or vegan butter melted
Keto No-Breading Version
  • 1 head cauliflower cut into florets
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup buffalo sauce
  • 1 tbsp vegan butter or oil melted

Method
 

  1. Rinse and thoroughly dry the cauliflower florets.
  2. Whisk flour, cornstarch, and spices in a bowl. Add water and mix until smooth.
  3. Toss florets in batter to coat evenly.
  4. Preheat air fryer to 400°F. Lightly grease the basket and place florets in a single layer.
  5. Cook for 12–15 minutes, flipping halfway through.
  6. Mix buffalo sauce with melted butter. Toss cauliflower in half of the sauce and return to air fryer for 2 minutes.
  7. Toss with remaining sauce and serve hot.
  8. Keto Version: Toss dry cauliflower florets with oil, garlic powder, salt, and pepper. Air fry at 400°F for 10–12 minutes, shaking halfway. Toss with warm buffalo sauce before serving.

Notes

Oven option: Bake at 425°F for 25–30 minutes, flipping halfway, then toss with sauce and bake 5 more minutes. To cook from frozen (no breading only): Air fry at 390°F for 12–14 minutes. Cauliflower won’t be as crispy as fresh.
