- In a bowl, whisk the eggs and sugar until light and fluffy.
- Gently fold in the mascarpone cheese until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then fold it into the mascarpone mixture, taking care not to deflate it.
- Dip each ladyfinger briefly into the cooled coffee and layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours or overnight; this is key to allowing flavors to meld.
- Before serving, dust with cocoa powder for that signature look and taste.
Notes
Tiramisu is best enjoyed within a few days, but it can last up to a week in the fridge. Freezing isn’t recommended as it can change the texture.
