Chicken and Cheese
  • 4 pieces chicken breasts (boneless, skinless; about 6 to 8 ounces each)
  • 1 cup mozzarella cheese, shredded Use low-moisture mozzarella for better melting.
Sauce and Seasoning
  • 1/2 cup balsamic glaze Can substitute with 1/4 cup balsamic vinegar plus 2 teaspoons honey.
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Vegetables for Serving
  • Zucchini or your favorite veggies for serving

Method
 

Preparation and Initial Baking
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper, then drizzle with olive oil.
  3. Place the chicken breasts in a baking dish and bake for 20-25 minutes.
Final Baking
  1. Remove the dish from the oven, drizzle the balsamic glaze over the chicken, and top with mozzarella cheese.
  2. Return to the oven and bake until the cheese melts and the chicken is cooked through, about 10 more minutes.
  3. Serve with zucchini or your favorite veggies.

Notes

For even cooking, pound thicker breasts to an even thickness or slice them horizontally into cutlets. Use a meat thermometer; chicken should be at 165°F (74°C). Let the chicken rest for 5 minutes before serving.
