Ingredients
  

For the batter
  • 3-4 pieces ripe bananas, mashed The riper the bananas, the sweeter the bread.
  • 1/2 cup melted butter Consider browning the butter for richer flavor.
  • 1 cup granulated sugar
  • 2 large eggs Beaten well after each addition.
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour Can substitute with gluten-free flour.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional) Can substitute with chocolate chips.

Method
 

Preparation
  1. Preheat the oven to 350°F. Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. Mash the ripe bananas thoroughly in a large mixing bowl.
  3. Add the melted butter to the mashed bananas and mix until smooth.
  4. Incorporate the sugar until the mixture becomes smooth and lighter in color.
  5. Beat in the eggs one at a time, followed by the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  7. Gradually add the dry mixture to the banana mixture, mixing just until the flour disappears.
  8. If using, fold in the chopped walnuts or pecans.
  9. Pour the batter into the prepared loaf pan, spreading it evenly.
Baking
  1. Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Store in an airtight container at room temperature for up to three days, or freeze slices wrapped in plastic wrap for longer storage.
