- Pat the seafood dry with paper towels to remove excess moisture.
- In a bowl, combine flour, cornmeal or breadcrumbs, paprika, garlic powder, salt, and pepper.
- In a separate bowl, whisk together egg and milk (or buttermilk).
- Dip each seafood piece into the wet mixture, then coat evenly with the dry batter.
- Heat oil in a deep fryer or skillet to 350°F (175°C). Fry seafood until golden and crispy, about 2–3 minutes per side.
- Remove and drain on paper towels. Serve hot with lemon wedges and your favorite dipping sauce.
