  • 3 pieces ripe bananas, mashed Make sure they are truly ripe for maximum sweetness.
  • 1 cup almond flour Can be substituted with regular flour if not concerned about gluten.
  • 1/2 cup rolled oats Use certified gluten-free oats for a gluten-free option.
  • 2 pieces eggs
  • 1/2 cup blueberries Can use fresh or frozen.
  • 1/4 cup honey or maple syrup Swap honey for maple syrup for a different flavor.
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the mashed bananas, eggs, honey (or maple syrup), and vanilla extract until well combined.
  3. In another bowl, combine almond flour, rolled oats, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t over mix!
  5. Gently fold in the blueberries, taking care not to crush them.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool before slicing and serve as a delicious guilt-free treat!

Notes

Enjoy a slice with butter or cream cheese. Store leftovers in an airtight container for 2-3 days, or freeze for up to 3 months. Reheat in the toaster or microwave for a quick snack.
