Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the mashed bananas, eggs, honey (or maple syrup), and vanilla extract until well combined.
- In another bowl, combine almond flour, rolled oats, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t over mix!
- Gently fold in the blueberries, taking care not to crush them.
Baking
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serve as a delicious guilt-free treat!
Notes
Enjoy a slice with butter or cream cheese. Store leftovers in an airtight container for 2-3 days, or freeze for up to 3 months. Reheat in the toaster or microwave for a quick snack.
