  • 1 piece egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda Ensure it's fresh for optimal rising.
  • Pinch salt
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 cup fresh blueberries Frozen blueberries can be used directly without thawing.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix it in.
  6. Add the flour and mix until just incorporated.
  7. Gently fold in the blueberries.
  8. Pour the batter into the greased loaf pan.
  9. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

For serving, spread a pat of butter on a warm slice, or serve with whipped cream cheese. Pairs well with coffee or iced tea. Store in an airtight container for up to a few days. For longer storage, wrap slices tightly and freeze.
