Ingredients
  

Main Ingredients
  • 2 chicken breasts boneless, skinless, trimmed
  • 1 large head cauliflower cut into bite-sized florets
  • 1/3 cup buffalo sauce store-bought or homemade
  • 2 Tbsp olive oil for grilling and roasting
  • 2 cups cooked grains brown rice, quinoa, or farro
  • 2 cups mixed greens spinach, kale, or arugula
  • 2 celery stalks chopped
  • 2 carrots thinly sliced or shredded
  • ranch or blue cheese dressing optional, for drizzling

  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • salt and black pepper to taste
  • fresh parsley or cilantro optional, for garnish

Method
 

  1. Pat chicken dry and rub with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Preheat grill or grill pan to medium-high heat. Grill chicken 6–7 minutes per side or until fully cooked. Rest, then slice.
  3. Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and pepper. Roast 20 minutes, flipping halfway.
  4. Remove roasted cauliflower and toss with buffalo sauce until evenly coated.
  5. Cook grains according to package directions. Fluff and keep warm.
  6. To assemble, divide grains into bowls. Top with greens, sliced grilled chicken, buffalo cauliflower, carrots, celery, and herbs. Drizzle with dressing if using.

Notes

For a vegan version, skip the chicken and double the cauliflower. Add chickpeas for protein. To meal prep, store each component separately and assemble fresh.
