Method
- Pat chicken dry and rub with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Preheat grill or grill pan to medium-high heat. Grill chicken 6–7 minutes per side or until fully cooked. Rest, then slice.
- Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and pepper. Roast 20 minutes, flipping halfway.
- Remove roasted cauliflower and toss with buffalo sauce until evenly coated.
- Cook grains according to package directions. Fluff and keep warm.
- To assemble, divide grains into bowls. Top with greens, sliced grilled chicken, buffalo cauliflower, carrots, celery, and herbs. Drizzle with dressing if using.
Notes
For a vegan version, skip the chicken and double the cauliflower. Add chickpeas for protein. To meal prep, store each component separately and assemble fresh.
