  • 8 oz macaroni
  • 2 cups cooked chicken, shredded Can substitute with shredded turkey or plant-based protein.
  • 1/2 cup Buffalo sauce
  • 2 cups shredded cheddar cheese Can replace with other types of cheese like pepper jack or gouda.
  • 1 cup milk
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Method
 

Preparation
  1. Cook macaroni according to package instructions; drain and set aside.
  2. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until bubbly.
  3. Gradually whisk in milk and continue cooking until the mixture thickens.
  4. Stir in the Buffalo sauce and shredded cheddar cheese until melted and smooth.
  5. Add the shredded chicken and cooked macaroni to the cheese sauce; mix until well coated.
  6. Season with garlic powder, salt, and pepper to taste.
  7. Serve hot, garnished with chopped green onions if desired.

Notes

Make sure to keep an eye on your sauce; you want it silky smooth, not grainy! Leftovers can be enjoyed straight from the fridge or transformed into loaded burritos or wraps for another meal!
