- Heat a skillet over medium-high heat. Crumble and brown the ground beef, then drain any excess fat.
- Add the browned beef, rinsed beans, diced tomatoes, onions, minced garlic, and all seasonings to the crockpot.
- Pour in the beef broth and stir to combine all ingredients evenly.
- Cover and cook on low for 6β8 hours or on high for 3β4 hours, until the flavors meld and the beans are tender.
- About 30 minutes before serving, stir in optional cheese, herbs, or vegetables if desired.
- Serve hot over rice, in tortillas, or with cornbread. Top with avocado, sour cream, or green onions for extra flavor.
Notes
Make-ahead tip: prep veggies and brown the meat a day before for a quicker start. Store leftovers for up to 4 days in the fridge or 3 months in the freezer. Use them in chili, burritos, or stuffed peppers.
