Burger Meat and Bean Crockpot

  • 1 lb ground beef 90–93% lean preferred
  • 1 cup kidney beans rinsed and drained
  • 1 cup black beans rinsed and drained
  • 1 cup pinto beans rinsed and drained
  • 1 cup diced tomatoes with juice
  • 1 cup beef broth or water for lighter flavor
  • 1 onion diced
  • 2 cloves garlic minced
Seasonings
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt to taste
  • 1/2 tsp black pepper
Optional Toppings

  • fresh herbs like cilantro or parsley

Method
 

  1. Heat a skillet over medium-high heat. Crumble and brown the ground beef, then drain any excess fat.
  2. Add the browned beef, rinsed beans, diced tomatoes, onions, minced garlic, and all seasonings to the crockpot.
  3. Pour in the beef broth and stir to combine all ingredients evenly.
  4. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the flavors meld and the beans are tender.
  5. About 30 minutes before serving, stir in optional cheese, herbs, or vegetables if desired.
  6. Serve hot over rice, in tortillas, or with cornbread. Top with avocado, sour cream, or green onions for extra flavor.

Notes

Make-ahead tip: prep veggies and brown the meat a day before for a quicker start. Store leftovers for up to 4 days in the fridge or 3 months in the freezer. Use them in chili, burritos, or stuffed peppers.
