  • 8 oz fettuccine or penne pasta
  • 1 lb chicken breast, sliced Can substitute with skinless, boneless thighs.
Seasonings and Sauce
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup heavy cream Can try half-and-half or coconut cream for a lighter version.
  • 1 cup chicken broth
Vegetables
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
Finishing Touches
  • Salt and pepper to taste Essential for flavor.
  • Parmesan cheese for serving Freshly grated for best flavor.
  • Fresh parsley for garnish

Method
 

Cooking Pasta
  1. Cook the pasta according to package instructions; drain and set aside.
Cooking Chicken
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the sliced chicken and Cajun seasoning; sauté until the chicken is cooked through.
  3. Remove the chicken from the skillet and set aside.
Making the Sauce
  1. In the same skillet, add bell pepper, onion, and garlic; sauté until softened.
  2. Pour in the chicken broth and bring to a simmer.
  3. Stir in the heavy cream and cook until the sauce thickens.
Combining Everything
  1. Return the chicken to the skillet and add the cooked pasta; toss everything together.
  2. Season with salt and pepper.
  3. Serve hot, topped with Parmesan cheese and garnished with parsley.

Notes

For best results, take your time sautéing the vegetables to enhance their sweetness. You can add cooked shrimp for a seafood twist or mix in leafy greens for extra nutrition.
