  • 1 cup dates, pitted
  • 1 cup walnuts Can substitute with pecans
  • 1 cup shredded carrots
  • 1/2 cup oats Use gluten-free oats for a gluten-free version
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup maple syrup
  • 1/4 cup shredded coconut (optional)

Method
 

Preparation
  1. In a food processor, combine the dates, walnuts, and shredded carrots.
  2. Add oats, cinnamon, nutmeg, and maple syrup.
  3. Process until the mixture is well combined and sticky.
  4. If using, fold in shredded coconut.
  5. Roll the mixture into small balls and place them on a baking sheet.
  6. Refrigerate for at least 30 minutes to set.
  7. Store in an airtight container in the fridge or freezer.

Notes

To enhance the flavor, try dipping the energy balls in melted dark chocolate or pairing them with fresh fruit. For storage, keep them in an airtight container in the fridge for up to a week or freeze for up to three months.
