Ingredients
  

Main ingredients
  • 1 lb chicken (cut into pieces)
  • 4 cups chicken broth
  • 1 cup carrots (sliced)
  • 1 cup celery (sliced)
  • 1 cup onion (chopped)
  • 1 cup peas (frozen or fresh)
Dumpling ingredients
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter (melted)
  • 1 cup milk
Spices
  • to taste thyme
  • to taste black pepper

Method
 

Cooking the Chicken and Veggies
  1. In a large pot, combine chicken, chicken broth, carrots, celery, onion, and spices. Bring to a boil, then let it simmer for about 20 minutes.
Making Dumplings
  1. In a separate bowl, mix the flour, baking powder, and salt together. Stir in melted butter and milk until a soft dough forms.
Cooking the Dumplings
  1. Drop spoonfuls of dough into the simmering soup. Cover and cook for an additional 15-20 minutes, or until dumplings have risen and are cooked through.
  2. Add peas just before serving to keep them bright and fresh. Ladle into bowls and enjoy your hearty chicken and dumplings!

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. If freezing, store chicken and dumplings separately to prevent sogginess. Use rotisserie chicken to save time.
