Ingredients
  

Pasta and Base Ingredients
  • 8 ounces rotini pasta
  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced Can swap for rotisserie chicken or turkey.
  • 4 slices bacon, chopped Use turkey bacon for a leaner version.
  • 1 cup ranch dressing Can swap for blue cheese dressing for a twist.
Cheese and Seasoning
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Method
 

Cooking Instructions
  1. Cook the rotini pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the diced chicken. Season with salt and pepper and cook until no longer pink, about 5–7 minutes.
  3. Add the chopped bacon and cook until crispy.
  4. Stir in the ranch dressing and cooked pasta, mixing until well combined.
  5. Remove from heat and sprinkle with cheddar and Parmesan cheeses. Let sit for a few minutes to allow the cheese to melt.
  6. Garnish with chopped green onions if desired and serve warm.

Notes

To store leftovers, place them in an airtight container in the fridge for up to 3 days. To freeze, let cool completely before transferring to a freezer-safe container; it will stay good for up to 2 months.
