Ingredients

For the Pasta
  • 2 cups uncooked pasta (Rotini recommended)
For the Sauce
  • 2 tablespoons butter
  • 1 tablespoon garlic, minced
  • 2 cups half and half
  • 2 tablespoons dry ranch dressing seasoning mix
  • 2 cups cheddar cheese, shredded Can swap for mozzarella
  • 2 tablespoons flour
For the Chicken
  • 2 small boneless skinless chicken breasts Sliced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt/Pepper to taste
For the Bacon
  • 6 strips bacon Cooked until crisp

Method

Cooking the Bacon
  1. In a large skillet over low heat, cook the bacon until crisp. Set aside, reserve drippings, and roughly chop the bacon once cooled.
Preparing the Chicken
  1. Slice the chicken breasts into thinner pieces, season them with salt, pepper, onion powder, and Italian seasoning. Sear in bacon drippings over medium-high heat until golden and cooked through. Let it rest, then cube the chicken.
Boiling the Pasta
  1. Cook the pasta in boiling salted water until al dente. Drain and set aside.
Making the Sauce
  1. In the same skillet, melt the butter and sauté the minced garlic. Once fragrant, add flour and gradually stir in half and half. Mix in ranch seasoning and cheese until the sauce is smooth and creamy.
Combining
  1. Add the cooked pasta to the sauce, then gently fold in the chicken. Top with the crispy bacon and serve warm.

Notes

To enhance your meal, serve with a light side salad, steamed broccoli, or garlic bread. A sprinkle of fresh parsley or chopped green onions can also add a pop of color.
