Marinate Chicken
- In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper. Marinate the chicken for at least 30 minutes.
Grill Chicken
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- Remove chicken from grill and let it rest for a few minutes before slicing.
Warm Tortillas
- Warm corn tortillas on the grill for about 30 seconds on each side, just until pliable.
Assemble Tacos
- Fill each tortilla with sliced chicken, topped with chopped onion and cilantro.
- Serve with lime wedges on the side.
Notes
For optimal flavor, allow the chicken to marinate for a few hours, if possible. The longer it soaks in the spices, the better! Leftovers can be stored in an airtight container in the fridge for up to three days.
