Chicken Street Tacos

Ingredients
  

For the Chicken Marinade
  • 2 pieces chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder Can substitute with taco seasoning if desired.
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • salt and pepper to taste
For the Tacos
  • 8 pieces corn tortillas
  • 1/2 cup onion, finely chopped
  • 1/2 cup cilantro, chopped Can substitute with fresh parsley if desired.
  • Lime wedges for serving Add for an extra zesty kick.

Method
 

Marinate Chicken
  1. In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper. Marinate the chicken for at least 30 minutes.
Grill Chicken
  1. Preheat the grill to medium-high heat.
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  3. Remove chicken from grill and let it rest for a few minutes before slicing.
Warm Tortillas
  1. Warm corn tortillas on the grill for about 30 seconds on each side, just until pliable.
Assemble Tacos
  1. Fill each tortilla with sliced chicken, topped with chopped onion and cilantro.
  2. Serve with lime wedges on the side.

Notes

For optimal flavor, allow the chicken to marinate for a few hours, if possible. The longer it soaks in the spices, the better! Leftovers can be stored in an airtight container in the fridge for up to three days.
