Preparation
- Start by mixing the cocoa powder and sugar in a bowl.
- In a saucepan, heat the cream until just hot, then pour it over the chopped chocolate. Let sit for 5 minutes.
- Stir the chocolate until smooth, then add the butter and vanilla extract. Mix until well combined.
- Fold in the cocoa and sugar mixture gradually until fully incorporated.
Adding Optional Ingredients
- If desired, fold in nuts or dried fruit for added texture and flavor.
Molding the Candies
- Pour the mixture into chocolate molds, filling them halfway.
- Chill in the refrigerator for at least 30 minutes or until firm.
- Once set, carefully remove the chocolates from the molds.
Storage
- Store chocolates in an airtight container at room temperature, away from heat and light.
Notes
Tempering chocolate before molding can enhance texture. Make sure to cool to the right temperature before pouring into molds.
