Ingredients
  

For the cookie dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened Can be substituted with dairy-free alternative.
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
For the filling
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter with the granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Prepare the filling by combining brown sugar and cinnamon in a small bowl.
Rolling and Baking
  1. Spread half of the dough onto parchment paper, sprinkle with the cinnamon filling, and roll it up tightly into a log.
  2. Slice the dough into rounds and place them on a baking sheet lined with parchment paper.
  3. Bake for 10-12 minutes or until golden brown, keeping a close eye to avoid overbaking.

Notes

Store leftover cookies in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
