- In another bowl, cream the softened butter with the granulated and brown sugars until fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Prepare the filling by combining brown sugar and cinnamon in a small bowl.
Rolling and Baking
- Spread half of the dough onto parchment paper, sprinkle with the cinnamon filling, and roll it up tightly into a log.
- Slice the dough into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden brown, keeping a close eye to avoid overbaking.
Notes
Store leftover cookies in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
