  • 1 cup unsalted butter, melted Make sure it's melted but not bubbling hot.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar For the batter.
  • 2 large eggs Can substitute with 1/4 cup unsweetened applesauce or a flax egg.
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour Can substitute with a 1:1 gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon Plus additional for topping.
  • 1/4 cup granulated sugar (for topping)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, mix melted butter with brown sugar and granulated sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, combine flour, baking powder, salt, and cinnamon. Gradually add this mixture to the wet ingredients until just combined; be careful not to overmix!
  5. Pour the batter into the prepared pan and spread it evenly.
  6. In a small bowl, mix the additional granulated sugar with cinnamon and sprinkle this sweet mixture generously over the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow to cool before cutting into squares and serving.

Notes

These blondies can be served warm or after refrigerating. For added enjoyment, drizzle with caramel sauce or serve with vanilla ice cream. Store in an airtight container at room temperature for 3-4 days or freeze for up to 3 months.
