  • 3 pieces ripe bananas, mashed Use overripe bananas
  • 1/3 cup melted butter Can substitute with coconut oil for dairy-free option
  • 1 teaspoon baking soda
  • Pinch none of salt
  • 3/4 cup sugar Can substitute with brown sugar for richer flavor
  • 1 large egg, beaten Can substitute with flaxseed meal or applesauce
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour blend

Method
 

Preparation
  1. In a mixing bowl, mix the mashed bananas with the melted butter.
  2. Stir in the baking soda and salt.
  3. Add sugar, the beaten egg, and vanilla extract. Mix well.
  4. Lastly, add the flour and mix until just combined.
  5. Pour the batter into the bread machine pan.
  6. Select the 'quick bread' cycle and start the machine.
  7. Once finished, remove the pan and let the bread cool before slicing.

Notes

Best enjoyed with butter, peanut butter, honey, or yogurt. Store in an airtight container at room temperature, or freeze for later. Feel free to add nuts, chocolate chips, or dried fruits for variations.
