  • 1/2 cup cashews, soaked in hot water for 1-2 hours Soaking helps achieve a smooth blend.
  • 1 can coconut cream or milk Almond milk can be used as a substitute.
  • 4-5 pieces medjool dates, soaked in hot water for 10 minutes and drained Soaking softens the dates for blending.
  • 1 double shot espresso Can substitute with 1 tbsp of instant coffee.

Preparation
  1. In a blender, combine soaked cashews, coconut cream, medjool dates, and espresso. Blend until smooth.
  2. Stir in chocolate chips.
  3. Pour the mixture into ice cream bar molds.
  4. Freeze for several hours until fully set.

Notes

Make sure to blend until the mixture is creamy for the best texture. If you don't have molds, you can use a shallow dish lined with parchment paper. For added decadence, serve drizzled with warm fudge or caramel.
