  • 4 cups macaroni pasta Any short pasta can be used
  • 2 cups cheddar cheese, shredded Can substitute with other cheeses
  • 2 cups milk Use whole or low-fat milk
  • 1/2 cup butter For a richer flavor, use unsalted
  • 1/4 cup flour All-purpose or whole wheat flour
  • 1 tsp salt Adjust to taste
  • 1 tsp black pepper Freshly ground preferred
For the Topping
  • 1 cup breadcrumbs Can use panko for extra crunch
  • 1/2 cup parmesan cheese, grated Optional, for added flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni in boiling salted water according to package instructions until al dente. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to create a roux.
  4. Gradually whisk in the milk, ensuring there are no lumps. Bring to a simmer and cook until thickened, about 5-7 minutes.
  5. Remove from heat and stir in the cheddar cheese until melted. Add salt and pepper to taste.
  6. Combine the cheese sauce with the cooked macaroni until well coated.
Baking
  1. Transfer the macaroni and cheese mixture into a greased baking dish.
  2. In a separate bowl, mix together the breadcrumbs and parmesan cheese. Sprinkle this mixture evenly over the macaroni.
  3. Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and crispy.

Notes

Feel free to add in cooked meats or vegetables for variation. Leftovers can be refrigerated and reheated.
