  • 1 can can of corn (drained)
  • 1 can creamed corn
  • 1 package Jiffy cornbread mix Can be substituted with a similar cornbread mix.
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheese (optional) Consider using pepper jack or cheddar for richer flavor.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained corn, creamed corn, Jiffy cornbread mix, sour cream, melted butter, and shredded cheese (if using).
  3. Mix well until all ingredients are fully incorporated.
  4. Pour the mixture into a greased 9×13 inch baking dish.
Baking
  1. Bake for 45-50 minutes or until golden brown and a toothpick inserted comes out clean.
  2. Allow to cool slightly before serving.

Notes

Let the casserole sit for a few minutes after baking for easier serving. Consider adding toppings such as diced jalapeños or crispy bacon for added flavor.
