  • 2 large boneless, skinless chicken breasts Can substitute with chicken thighs for richer flavor.
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced Adjust according to taste.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1/2 cup grated Parmesan cheese Can swap for Pecorino Romano for a sharper taste.
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh chopped parsley for garnish (optional)

Method
 

Preparation
  1. Slice chicken breasts in half horizontally or pound them to an even thickness. Season with salt, pepper, and Italian seasoning.
Cooking
  1. Heat olive oil in a skillet over medium heat. Sear chicken until golden and cooked through, about 4–5 minutes per side.
  2. Remove the chicken from the skillet. Lower the heat, add butter and garlic, and sauté until fragrant.
  3. Pour in the cream and stir to deglaze the pan, scraping up any tasty bits. Add the Parmesan cheese and simmer until the sauce thickens.
  4. Return the chicken to the skillet, simmering for another 2–3 minutes to ensure it’s heated through and well-coated with the sauce.

Notes

Pairs well with buttery noodles, fluffy mashed potatoes, or a fresh green salad. Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to three months.
