  • 1 cup shredded mozzarella cheese Can use pepper jack cheese for a spicy kick.
  • 1 cup chicken broth Ensure it's gluten-free if necessary.
  • 1 cup broccoli florets Feel free to swap for other veggies like spinach or bell peppers.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Adjust according to personal preference.
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cauliflower rice, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Stir in the broccoli florets and half of the mozzarella cheese.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Top with the remaining mozzarella cheese.
  6. Drizzle with olive oil.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Allow to cool slightly before serving.
