  • 2 fillets salmon fillets
  • 2 cups fresh spinach Can be swapped with kale or arugula.
  • 8 oz pasta (e.g., fettuccine or penne)
  • 1 cup heavy cream For a lighter version, substitute half-and-half.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper and add them to the skillet. Cook for about 4-5 minutes on each side or until cooked through. Remove the salmon and set aside.
  3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a simmer, stirring well. Add the fresh spinach and cook until just wilted.
  5. Flake the cooked salmon and return it to the skillet. Add the cooked pasta and toss everything together until well coated.
  6. Serve immediately with grated Parmesan cheese on top.

Notes

To elevate your dish, consider adding a side salad with vinaigrette, fresh herbs, or lemon wedges. For leftovers, store in an airtight container in the fridge for 2-3 days and reheat gently. Avoid freezing spinach until reheating.
