- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper and add them to the skillet. Cook for about 4-5 minutes on each side or until cooked through. Remove the salmon and set aside.
- In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer, stirring well. Add the fresh spinach and cook until just wilted.
- Flake the cooked salmon and return it to the skillet. Add the cooked pasta and toss everything together until well coated.
- Serve immediately with grated Parmesan cheese on top.
