Ingredients
  

Pasta
  • 8 oz spaghetti or fettuccine Use your preferred pasta shape.
Sauce Ingredients
  • 1 cup ripe tomatoes (diced) Fresh or canned can be used.
  • 1 cup heavy cream Can substitute with half-and-half or plant-based cream.
  • 4 cloves fresh garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil (chopped) For garnish.
  • to taste Salt and pepper

Method
 

Cooking the Pasta
  1. Boil salted water in a large pot and cook the pasta according to package instructions until al dente. Drain and set aside.
Making the Sauce
  1. In a large skillet, heat the olive oil over medium heat. Sauté the minced garlic until it turns golden brown and fragrant—about 2 minutes.
  2. Add the diced tomatoes along with salt and pepper. Let it simmer for about 5 minutes.
  3. Lower the heat and stir in the heavy cream until it’s well blended.
Combining and Serving
  1. Toss the cooked pasta in the sauce until equally coated.
  2. Serve topped with fresh basil and sprinkle of grated Parmesan cheese if desired.

Notes

Creamy Tomato Garlic Pasta pairs well with garlic bread, salads, or grilled chicken. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
