These air fryer zucchini fries and crispy Brussels sprouts are quick, budget-friendly, and perfect for weeknights or potlucks.

Ingredients
  

For the Zucchini Fries
  • 2 medium Zucchini (firm, medium-sized) Cut into fry shapes
  • 1 tbsp Olive oil Use a light coating
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1/2 tsp Salt To taste
  • 1/4 tsp Pepper To taste
For the Brussels Sprouts
  • 1 lb Brussels sprouts (trimmed, halved)
  • 1 tbsp Olive oil
  • 1/2 tsp Salt To taste
  • 1/4 tsp Pepper To taste
  • 1/4 cup Parmesan cheese (freshly grated) For topping
Optional Vegetables
  • 1 cup Other assorted vegetables (optional) Cut to similar size for even cooking

Method
 

Preparation
  1. Preheat the air fryer according to the manufacturer's instructions.
  2. For zucchini fries, slice zucchini into fries and toss with olive oil, garlic powder, paprika, salt, and pepper.
  3. Place zucchini fries in the air fryer basket and cook at 400°F for 10-15 minutes until crispy, shaking the basket halfway through.
  4. For Brussels sprouts, trim and halve the sprouts, toss with olive oil, salt, and pepper, then sprinkle with Parmesan cheese.
  5. Air fry the Brussels sprouts at 375°F for 10-12 minutes or until golden brown and crispy.
Serving
  1. Serve both vegetable sides warm as delicious additions to any meal.

Notes

Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the air fryer to restore crispness. For a spicy option, add cayenne to the zucchini toss. For a Mediterranean twist, toss sprouts with za’atar.
