  • 4 pieces chicken breasts Boneless, skinless breasts work best.
  • 1 cup dill pickles, chopped Use crunchy dill pickles, drained and roughly chopped.
  • 1 cup grated Parmesan cheese Freshly grated has better flavor than pre-grated.
  • 1 cup breadcrumbs Plain or panko breadcrumbs work; panko gives extra crunch.
  • 2 pieces eggs Beaten with salt and pepper.
  • Salt and pepper, to taste
  • Oil for frying Use a neutral oil with a high smoke point (e.g., canola or vegetable oil).

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine chopped dill pickles, Parmesan cheese, and breadcrumbs.
  3. In another bowl, beat the eggs and season with salt and pepper.
Cooking
  1. Dip each chicken breast into the egg mixture, then coat with the dill pickle and Parmesan crust.
  2. Heat oil in a skillet over medium heat and fry each coated chicken breast until golden brown on both sides.
  3. Transfer the chicken to a baking sheet and bake in the preheated oven for 15-20 minutes or until cooked through.

Notes

To avoid a soggy bottom, transfer fried chicken to a wire rack on the baking sheet for air circulation while in the oven. Leftovers can be reheated in a 400°F oven for 8 to 12 minutes to maintain crispiness.
