Crockpot Christmas Jam

Ingredients
  

Fruits
  • 1.5 pounds cranberries, fresh or frozen Frozen are fine and save a step; no need to thaw.
  • 1.5 pounds strawberries, fresh or frozen Frozen work well; if using large fresh berries, quarter them.
Sugars
  • 1 cup granulated sugar Swap for coconut sugar for a deeper flavor.
  • 1.25 cups light brown sugar Texture and color will change if substituted.
Spices
  • 2 teaspoons ground allspice
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
Optional Add-ins
  • 1 tablespoon lemon juice Increases acidity and shelf life; add after cooking if preferred.
  • 1 piece orange zest Brightens the jam.

Method
 

Preparation
  1. Add cranberries, strawberries, both sugars, and spices to the crockpot. Stir to combine.
  2. Ensure the sugars are distributed evenly. If using zest, add it now; add lemon juice after cooking for a fresher taste.
Cooking
  1. Cover and cook on high for four hours, stirring once halfway through.
  2. Check at 3 hours if your slow cooker runs hot.
Blending
  1. Blend the hot mixture with an immersion blender or in batches with a countertop blender.
  2. Pulse just two to three times for a jam-like texture; do not over-blend to keep visible fruit pieces.
Jarring
  1. Ladle hot jam into clean, heatproof jars. Wipe rims and secure lids lightly.
  2. Cool at room temperature, then refrigerate overnight.

Notes

Taste the jam before jarring and adjust sweetness or acidity as needed. Sterilize jars to reduce breakage when adding hot jam.
