  • 2 large large cucumbers
  • 1 cup cherry tomatoes
  • 8 oz fresh mozzarella balls Can substitute with vegan mozzarella.
  • 1/4 cup fresh basil leaves
Dressing
  • 2 tbsp olive oil Consider marinating cucumbers in this.
  • 1 tbsp balsamic vinegar
  • to taste Salt and pepper Adjust seasoning to elevate flavors.

Method
 

Preparation
  1. Wash and slice the cucumbers into rounds.
  2. Halve the cherry tomatoes.
  3. In a large bowl, combine the cucumber slices, cherry tomatoes, mozzarella balls, and basil leaves.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Season with salt and pepper to taste.
  6. Toss gently to combine.
  7. Serve immediately or chill in the refrigerator for 15 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Best to store the dressing separately to maintain freshness.
