Pasta and Eggs
  • 2 cups elbow macaroni Make sure to cook according to package instructions.
  • 6 pieces hard-boiled eggs Chopped before adding to salad.
Dressing and Add-ins
  • 1/2 cup mayonnaise Adjust for extra creaminess as per taste.
  • 1 teaspoon Dijon mustard Adds tanginess.
  • 1/4 cup diced celery For crunch.
  • 1/4 cup diced red onion Chopped uniformly.
  • to taste Salt and pepper For seasoning.
  • to taste Paprika For garnish.

Method
 

Preparation
  1. Cook the elbow macaroni according to package instructions, then drain and rinse with cold water.
  2. In a large bowl, chop the hard-boiled eggs and add them to the bowl.
  3. Add the cooked macaroni, mayonnaise, Dijon mustard, diced celery, diced red onion, salt, and pepper.
  4. Mix everything together until well combined.
  5. Cover and refrigerate for at least one hour to allow the flavors to meld.
  6. Before serving, sprinkle paprika on top for garnish.

Notes

Make sure to rinse the macaroni after cooking to prevent mushiness. You can substitute Greek yogurt for a lighter version and switch vegetables for personal preference.
