  • 3 pieces ripe bananas, mashed The riper, the sweeter.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar You can use coconut sugar for a deeper flavor.
  • 1 large egg, beaten Can swap with a flax egg for egg-free version.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute with gluten-free flour.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Mix in the baking soda and a pinch of salt.
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Add the flour, mixing until just combined. Be careful not to overmix!
  7. Pour the batter into a greased loaf pan (the greasing helps with easy removal).
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let it cool before slicing.

Notes

Banana bread can be enjoyed on its own or enhanced with toppings like butter or cream cheese. Store leftovers in an airtight container at room temperature or in the fridge for up to a week. Freeze slices for longer storage.
