  • 2 cups cooked chicken, shredded Rotisserie chicken works as a quick shortcut.
  • 1 cup diced bell peppers
  • 1 cup diced red onion
  • 1 cup cherry tomatoes, halved
  • 1 each avocado, diced
  • 1 each lime, juiced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

Preparation
  1. In a large bowl, combine cooked corn, shredded chicken, bell peppers, red onion, and cherry tomatoes.
  2. Squeeze lime juice over the mixture, and sprinkle with chili powder, salt, and pepper. Toss to combine.
  3. Serve the mixture in bowls, topping each with diced avocado and fresh cilantro.

Notes

For added texture, consider incorporating some crushed tortilla chips on top before serving. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months (separate avocado and fresh toppings before freezing).
