Ingredients
  

For the Marinade
  • 2 lbs Boneless skinless chicken breasts or thighs Select high-quality chicken.
  • 1/4 cup Lime juice Enhances tenderness and flavor.
  • 2 tbsp Olive oil For marinating.
  • 3 cloves Garlic, minced
  • 1 tbsp Chili powder
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Oregano
  • 1 tsp Cayenne pepper (optional) For added spice.
For the Fajitas
  • 1 cup Bell peppers (red, green, yellow), sliced Use a mix for color.
  • 1 medium Onion, sliced Add crunch and flavor.
  • 8 tortillas Corn or flour tortillas

Method
 

Marination
  1. In a large bowl, combine lime juice, olive oil, minced garlic, and the seasoning blend. Coat the chicken thoroughly and let it marinate for at least 30 minutes.
Cooking the Chicken
  1. Heat a cast-iron skillet over medium-high heat. Add a splash of oil and cook the marinated chicken in batches for about 5 minutes on each side until golden brown.
  2. Remove chicken and let it rest for 5 minutes before slicing into strips.
Sautéing Vegetables
  1. In the same skillet, add the sliced bell peppers and onions. Stir frequently for about 5-7 minutes until tender but slightly crisp.
Assembly
  1. Warm tortillas and assemble the fajitas by layering chicken, sautéed veggies, and toppings like guacamole or salsa. Serve immediately.
