Ingredients
  

Chicken and Filling
  • 4 pieces chicken breasts Boneless and skinless
  • 8 ounces mushrooms, chopped Any variety works, preferably cremini or button
  • 1 cup spinach, chopped Can substitute with other greens like kale
  • 4 ounces cream cheese, softened Bring to room temperature for easier mixing
  • 1 cup shredded mozzarella cheese Can be substituted with cheddar for a different flavor
  • 2 cloves garlic, minced Fresh garlic enhances flavor
  • 1 teaspoon olive oil For sautéing the filling
  • to taste Salt and pepper Season to preference
  • 1 teaspoon Italian seasoning Herbs de Provence can also be used

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat, add garlic, and sauté until fragrant.
  3. Add chopped mushrooms and spinach, cooking until softened.
  4. Stir in cream cheese, mozzarella, salt, pepper, and Italian seasoning, mixing until well combined.
  5. Slice a pocket into each chicken breast and stuff with the mushroom mixture.
  6. Place stuffed chicken breasts in a baking dish and season with salt and pepper.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).
  8. Let rest for a few minutes before serving.

Notes

For leftovers, store in an airtight container in the refrigerator for up to three days. Reheat at 350°F (175°C) or in the microwave.
