Preparation
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat, add garlic, and sauté until fragrant.
- Add chopped mushrooms and spinach, cooking until softened.
- Stir in cream cheese, mozzarella, salt, pepper, and Italian seasoning, mixing until well combined.
- Slice a pocket into each chicken breast and stuff with the mushroom mixture.
- Place stuffed chicken breasts in a baking dish and season with salt and pepper.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).
- Let rest for a few minutes before serving.
Notes
For leftovers, store in an airtight container in the refrigerator for up to three days. Reheat at 350°F (175°C) or in the microwave.
