  • 4 pieces chicken breasts or thighs Use whatever is on sale.
  • 1 cup parmesan cheese Grated, for pressing onto the chicken.
  • 4-6 cloves garlic Smash or chop finely.
  • 2 tablespoons olive oil To coat the chicken.
  • to taste salt and pepper Essential seasoning for flavor.
  • 1/2 cup breadcrumbs Optional, for added crunch.
  • 1 teaspoon dried Italian herbs Can be substituted with other herbs.

Method
 

Preparation
  1. Pat the chicken dry to ensure it crisps instead of steams.
  2. Slather the chicken with olive oil, then season generously with salt, pepper, and Italian herbs if using.
  3. Chop up the garlic and rub it all over the chicken.
  4. Press grated parmesan onto the chicken so it sticks.
  5. If using, sprinkle breadcrumbs over the top for extra crunch.
Cooking
  1. Place the chicken in a baking dish and preheat the oven to 400°F (200°C).
  2. Roast the chicken for about 25 minutes, or until the internal temperature reaches 165°F (73.9°C) and the cheese is bubbly and golden.
  3. Allow to rest for a couple of minutes before serving.

Notes

Feel free to swap chicken parts, reduce garlic for picky eaters, or make in the air fryer for quicker cooking. This dish can also be made ahead of time and reheated.
