Ingredients
  

For the Cookie Base
  • 1 cup almond flour Can substitute with oat flour.
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil Can be replaced with butter.
  • 1/2 teaspoon salt
For the Filling and Topping
  • 1/2 cup date caramel Layer spread over cookie base.
  • 1 cup dark chocolate chips For melting.
  • 1 tablespoon coconut oil For melting chocolate.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the almond flour, coconut flour, maple syrup, coconut oil, and salt to form a dough.
  3. Press the dough into a lined baking dish to create a base.
  4. Bake for 15-20 minutes until golden.
  5. Allow to cool, then spread the date caramel over the cookie base.
  6. Melt the dark chocolate chips and coconut oil together in a microwave or double boiler.
  7. Pour the melted chocolate over the caramel layer and refrigerate until set.
  8. Once firm, cut into bars and enjoy your healthier Twix!

Notes

Let the base cool completely before spreading on the caramel to ensure it doesn’t melt. These bars can be served with vanilla ice cream or topped with sea salt.
