  • 1 cup unsalted butter Can substitute with plant-based butter or coconut oil.
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute with gluten-free flour (1:1 ratio).
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the eggs one at a time, followed by stirring in the vanilla extract.
  4. In another bowl, mix together the flour, cocoa powder, baking powder, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes, or until the edges are firm but the centers are still soft.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, consider adding a pinch of espresso powder or some nuts. Store in an airtight container at room temperature for about a week. They freeze well for longer storage.
