  • 2 cups cooked quinoa Can substitute with couscous or brown rice.
  • 1 pound boneless chicken breast, grilled and sliced May use other proteins like shrimp or tofu.
  • 1 cup cherry tomatoes, halved Use any fresh tomatoes you have on hand.
  • 1 each cucumber, diced Can be substituted with grated cucumber in tzatziki.
  • 1 each red onion, thinly sliced
  • 1 each bell pepper, diced Any color bell pepper works.
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced Kalamata or green olives are great options.
  • 1/4 cup fresh parsley, chopped
  • to taste Salt and pepper
For the Tzatziki Sauce
  • 1 cup Greek yogurt Can use non-fat or full-fat based on preference.
  • 1/2 each cucumber, grated
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice Freshly squeezed is ideal.
  • to taste Salt

Method
 

Preparation
  1. In a large bowl, combine the cooked quinoa, grilled chicken, cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, olives, and parsley.
  2. Season with salt and pepper to taste, giving everything a gentle toss to mix those flavors.
Making Tzatziki Sauce
  1. In a separate bowl, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt.
Serving
  1. Serve your Greek Chicken Bowls with a generous dollop of tzatziki on top. Enjoy!

Notes

These bowls are customizable; try adding toasted pine nuts, warm pita bread, or a crisp salad on the side. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Tzatziki is best enjoyed fresh.
