- Preheat oven to 350°F (175°C) and grease a loaf pan or line with parchment paper.
- In a mixing bowl, mash bananas. Add eggs, honey/maple syrup, and yogurt/oil. Whisk until smooth.
- In a separate bowl, mix together flour, baking soda, salt, and cinnamon.
- Fold dry ingredients into wet mixture just until combined. Do not overmix.
- Fold in any optional add-ins like nuts or chocolate chips.
- Pour batter into loaf pan. Bake for 50–60 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use deeply ripe bananas with brown spots for best flavor and natural sweetness. To make it vegan, use flax eggs and coconut yogurt. This bread freezes well: slice and wrap individually.
