Ingredients

  • 2 pieces ripe bananas The riper, the sweeter.
  • 1/3 cup melted coconut oil Can substitute with melted butter.
  • 1/2 cup sugar Can swap for honey or maple syrup.
  • 1 piece large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cups white whole wheat flour Can be swapped for gluten-free flour.
  • 1 cup blueberries Fresh or frozen.
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted coconut oil into the mashed bananas.
  4. Mix in the sugar, egg, and vanilla extract until everything is well combined.
  5. Sprinkle the baking soda and salt over the mixture and stir them in.
  6. Add the flour and mix gently until just combined. Be careful not to over-mix!
  7. Gently fold in the blueberries and cinnamon.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with nut butter, honey, or cream cheese. Store in an airtight container for up to three days. Can freeze for later enjoyment.
