Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted coconut oil into the mashed bananas.
- Mix in the sugar, egg, and vanilla extract until everything is well combined.
- Sprinkle the baking soda and salt over the mixture and stir them in.
- Add the flour and mix gently until just combined. Be careful not to over-mix!
- Gently fold in the blueberries and cinnamon.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve warm with nut butter, honey, or cream cheese. Store in an airtight container for up to three days. Can freeze for later enjoyment.
