Ingredients
  

Base
  • 2 lb boneless skinless chicken breasts
  • 1 large yellow onion sliced
  • 3 bell peppers red, green, yellow; sliced
Seasoning Mix
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Liquid
  • 0.5 cup low-sodium chicken broth
  • 1 lime juice only
Optional Toppings
  • fresh cilantro
  • shredded cheese
  • salsa
  • sour cream
  • warm tortillas

Method
 

  1. Spray crockpot lightly or use liner.
  2. Layer sliced onions and bell peppers in bottom of crockpot.
  3. Place chicken breasts on top of vegetables.
  4. Sprinkle seasoning mix evenly over chicken and vegetables.
  5. Pour chicken broth and lime juice over the top.
  6. Cover and cook on low for 6 hours or high for 3 hours.
  7. Remove chicken, shred with two forks, return to crockpot and mix with vegetables and juices.
  8. Serve in tortillas or bowls with your favorite toppings.

Notes

Add peppers later in cooking for firmer texture. Use thighs for juicier chicken. To spice it up, include jalapeños or cayenne. Great for meal prep or freezer meals.
